The fresh leaves can be used in teas, cool drinks, fruit dishes and herb blends. Because it grows readily, lemon balm is often best planted where its spread can be controlled.
It prefers a reasonably moist soil and will grow in sun or part shade. Regular cutting keeps the plant leafy and helps stop it becoming untidy; removing flower heads can also reduce self-seeding.
